Ingredients for 2 persons:
5 eggs
2 bananas
30 gram protein powder (I use vanilla flavor) (HERE)
150 ml milk (you can take coconut milk or every other kind)
a pinch of cinnamon
coconut oil
small pan
plate to serve
for the topping I usually take:
peanutbutter (HERE)
cacao nibs (HERE)
strawberries
blueberries
coconut flakes
Step by Step:
- Mix: Put all the ingredients for the pancakes in your blender and mix it until you have a homogenous mass.
- Heat the pan: warm up the pan at a low heat and add coconut oil
- Bake: as soon as the oil is hot, add approx. ¼ of the mass in the small pan and wait until it’s halfway baked. Now you can carefully turn the pancake. Repeat this until your dough is completely used up. Pile up the pancakes.
- Decorating: Decorate the pancake with everything you like. I love to use healthy peanutbutter (HERE), berries and cacao nibs (HERE).
